Historia

The high altitude, fertile soils, and local climate give the La Plata farm exceptional conditions to produce coffees full of nuance. It is here that Clever Cruz, an independent producer from Tabaconas in the San Ignacio region of northern Peru, works his land. In the mountains of Cajamarca, coffee cherries mature more slowly, helping to develop more complex, aromatic, and elegant profiles

On his farm, Clever works with great care while maintaining simple and traditional methods. The harvest is carried out together in the same plot, where Geisha and Pache cherries are picked at the same time and later processed together using his own infrastructure.After harvesting, the coffee is depulped and placed with its mucilage in ceramic tanks, where it ferments for three days. These tanks help maintain a stable fermentation and allow the coffee to develop greater complexity and sweetness. Once fermentation is complete, the coffee is washed in the same ceramic tank to remove the mucilage and then moved to the drying stage.

This lot is a farm blend, composed of 60% Geisha and 40% Pache. The Geisha contributes the coffee’s delicate floral character, while the Pache adds sweetness and body, rounding out the cup and leaving a smooth and pleasant finish.

The result is a balanced and elegant coffee: floral, sweet, and easy to enjoy, with a comforting character that reflects both its origin and the careful way Clever works his coffee.

Creemos que la máxima revelación sensorial de nuestros cafés ocurre tras un periodo de reposo o desgasificación después de su fecha de tueste. Para mayor claridad y carácter recomendamos consumir los cafés con estos dias de reposo:

Cafés para Espresso: 3 semanas después del tueste

Cafés para Filtro: 7 dias después del tueste.
